Simon served in the Army as a Medic stationed in France and earned an Honorable Discharge in 1953. He was a member of St. Patrick Church in Port Sulphur, LA and served as a Eucharistic Minister. Simon retired from Phillips Petroleum. His true calling was commercial fishing. He enjoyed nothing better than sitting back in his boat and watching the shrimp jumping above the nets. He could always find "the spot". He was such a beautiful and caring soul that he made friends of whomever he met. He loved his family and was our Rock who helped us weather many a storm. Our family would like to thank Dr. Shibu Varughese, his staff, the nursing staff of Ochsner Westbank, and the staff and nurses at Riverbend Nursing Home, especially Curtis Sylve, for their loving care and dedication and special thanks to Father Jerry Stapleton of St. Patrick Church. Family and friends are invited to attend the Funeral Mass on Saturday, September 26, 2015 at 11am at St. Patrick Church, Port Sulphur, LA.
